GreenPan thinks that cookware should match the food that is being cooked, so they developed special surfaces for different food categories. All Milan 3D products are divided into 3 different surface categories: flat, dotted and ribbed patterns.
We received the dotted (dimpled) pattern and love it. The smooth surface is for liquid foods like eggs and pancakes. The dimpled surface is for fish and veggies.
The ribbed surface is for meat and poultry.
I have to tell you we have used the dimpled surface pan for omellete's, steak, scrambled eggs, pretty well anything we can put in the pan and nothing sticks to the surface, it cleans well and is absolutely great.
